Crispy lemongrass salad 1st - ยำตะไคร้ทอด

Today I make crispy lemongrass salad or ยำตะไคร้ทอด (1st time), and I add fried tofu. I cooked like Yum pla dook foo ยำปลาดุกฟู or Crispy Catfish Green Mango Salad I substitue Fried crispy catfish with fried lemongrass. It is very tasty.

Ingredients
  1. 2-3 Thai chili, minced
  2. 1 teaspoon coconut sugar
  3. 1 shallots, thinly sliced
  4. 1 clove of garlic
  5. 1 lime
  6. 1/3 cup green mango
  7. 2 tablespoons fish sauce
  8. 1 cup thin slice Lemon grass
  9. 1/4 cup cashew or peanut, optional
  10. 1 pickle cucumber, optional
  11. 1 piece of Tofu (cut into cube, 3/4 cm)

Frist of all, fried the lemon grass until yellow crispy) and tofu (just yellow not crispy) with high medium heat.

Slice the cucumber for decorate, and put crispy lemon grass mix with tofu between or in the middle of the plate (or just set aside) , set aside.

Add mince Thai chili in lime, sugar, fish sauce, and stir until cooperate. Shred the mango with knife (Thank you thaifood.about) and add Shredded mango into sauce and stir a little bit.

Mix all ingredients (except cucumber), sauce for serve into a small bowl and serve.
